Hi all, about a year ago I found an oven fried chicken recipe in a cook book and my boyfriend loved it. I have since lost the recipe while moving. I remember a few ingredients..... crushed saltines, grated parm cheese, and parsley flakes or some other spice that was green. OVEN FRIED SALTINE CHICKEN WITH PARMESAN CHEESE
Ingredients:
8 chicken thighs
5 tablespoons melted butter
3 tablespoons grainy mustard or a spicy mustard
2 teaspoons maple syrup or honey
1/4 teaspoon garlic powder
1 1/4 SALTINE crumbs
1/3 cup shredded Parmesan cheese
3/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons dried parsley flakes
Preparation:
Heat oven to 400掳. Line a large baking pan with foil and lightly grease or spray with nonstick cooking spray.
Wash chicken thighs and trim excess fat and skin. Remove skin, if desired. Pat dry and sprinkle with salt and pepper.
Combine the melted butter with mustard, honey or syrup, and garlic powder in a shallow bowl. In another shallow bowl, combine the crumbs with shredded Parmesan, paprika, 3/4 teaspoon salt, 1/4 teaspoon pepper, and parsley.
Brush or rub the chicken thighs with the butter and mustard mixture then press all sides in the panko mixture to coat thoroughly. Place on prepared baking sheet. Bake for 40 to 50 minutes, or until juices run clear when chicken is pierced with a fork.
OVEN FRIED CAJUN CHICKEN ----------------------------------------鈥?br>
1 frying chicken or 6 breasts or 6 leg thigh quarters
1 cup flour
black pepper and garlic powder (for sprinkling)
Creole seasoning
paprika
cayenne pepper
1/2 cup butter
Preheat oven to 425掳F.
Pat chicken dry with a clean paper towel and sprinkle with garlic powder and Creole seasoning.
In a Ziploc bag, combine 1 cup flour, 1/4 teaspoon black pepper, a pinch of cayenne pepper (optional - adjust heat as desired), 1/2 teaspoon paprika and 1/2 teaspoon Creole seasoning. Close bag and mix well.
Shake chicken in the bag with flour and seasonings. Line a 9 x 13 inch glass baking dish with foil. Add butter and place in oven until it sizzles. Place chicken in dish, skin side down. Bake 30 minutes; turn reduce heat to 325掳F degrees and bake 35-45 minutes longer or until chicken is cooked through (this depends upon the weight of the chicken). It will be a beautiful golden brown and very tender when done.

This one is three ingredients and a little time. Not bad!
* 1 (3 pound) whole chicken, cut into parts
* 3/4 cup melted butter
* 2 cups crushed saltine crackers
1. Preheat oven to 325 degrees F (165 degrees C).
2. Dip the skinless chicken pieces in the melted butter/margarine. Coat with the crushed salted cracker crumbs. Place on a cookie sheet lined with tin foil and bake in the preheated oven for 1 hour.
Now, looking at this, I'd make a few adjustments... A little garlic powder mixed with the cracker crumbs, maybe a little lemon pepper.
Also, think of this. Yeah, it talks about using a whole chicken, but is this necessary? No, not really. Just a matter of changing things up a little. With the bone in the chicken, the cooking time is increased. Use boneless chicken breasts, and the time cuts, almost in half. Want to make sure it cooked through? A small slit in one of the breasts will tell you it's done. Or, if you have a kitchen thermometer, check the temperature!
I use a similar recipe that uses bread crumbs, but I know I have substituted crackers, even crushed pork rinds before. I brush boneless skinless chicken breasts with lightly mustard (I have substituted mayo before), then dredge in a mixture of breadcrumbs, parmesan cheese, garlic powder, salt, pepper, and parsley (sometimes I use oregano -just less of it). Place in a prepared baking dish %26amp; drizzle with melted butter (I use butter flavored no-stick spray to save calories). Bake for approximately 40 min at 350 degrees.
