I make this one for my son all the time. He just loves it
Don't let it sit for too long or it gets soggy. I suggest chilling all ingredients and adding dressing about 30 minutes before serving. I like to throw in some pine nuts or cashews for different crunchy texture.
RAMEN NOODLE CHICKEN SALAD.
Ingredients
12 oz of cooked bite sized chicken
3 oz package of ramen noodles
1/4 cup rice or white wine vinegar
2 tablespoons orange juice
2 tablespoons salad oil
two to three dashes of hot pepper sauce
6 cups Shredded cabbage
2 cups fresh vegetables any type or mix such as bean sprouts, pea pods, thinly sliced carrots, thinly sliced cucumbers, thinly sliced onions what ever your family likes
1 small 3.5 oz can mandarin oranges well drained
Directions
For dressing combine in a glass jar with a tightly fitting lid the flavor packet from the noodles, vinegar, orange juice, salad oil and the hot sauce
shake well and set aside until needed
In a large bowl combine the salad greens, vegetables, and mandarin oranges
toss gently to combine
break up noodles and add to salad
cover and chill for at least one hour
add dressing to salad and allow to set for 5 minutes so noodles soften just slightly
add chicken and toss gently to coat salad with dressing

Mandarine Chicken Salad (easy version)
1/2-pound cooked chicken strips
2 - 12 ounce containers prepared cole slaw
1 (8.5-ounce) can mandarin oranges in light syrup, drained
1 (8.5) ounce) can crushed pineapple, drained
1/2 cup slivered almonds
1 tablespoon toasted sesame seed oil, optional
1 can Chinese Chow Mein Noodles
Slice chicken strips diagonally. In a bowl, toss together all ingredients. Reserve some almonds for garnish; top with chow mein noodles to taste, and serve.

You don't really need a recipe if you know what the main flavor was to the dressing. Just put your shredded cabbage in a bowl with your diced chicken, and slivered almonds (lightly toasted to bring up the flavor....and add your dressing. Now I would add chopped green onions and a fruit such as mandarin, pineapple or thin sliced apple.
For the dressing it depends...if it had an Asian flavor then go with the one above for Chinese Chicken salad. But I like a creamy Lemon Honey Dressing which is just Mayo +juice of 1 lemon + some zest and a drizzle of honey to taste. Simple and good. A teaspoon or less of sweet paprika gives it a nice flavor and color with apples. Always a little S and P...
