Hey I was in a bit of a jam once and used a can of cream of chicken soup but used water instead of milk and it has become the chicken gravy of the house....Try it you may like it also...Hope I helped.
Melt some butter in a sauce pan - about half a cup. Slowly add flour while briskly whisking the mixture until it is the consistency of a thick paste. Then slowly whisk in chicken/veggie/beef stock (whatever you like) until the consistency is as thick or thin as you like. If you'd like it creamier, add some milk or cream also. Add salt and pepper to taste.
The key is to really whisk when you're adding the liquid. If you end up with lumps, just pour it through a strainer.
The EASIEST thing to do for chicken gravy is to use a can of condensed chicken soup and DON'T add water.

I like to use chicken broth or dropping with a can of cream of mushroom soup... Just whisk together the soup/drippings to make a mushroom gravy you can even cut up some fresh mushrooms so it looks more homemade... .You can thin it down with water if you need to...I cheat and do this at thanksgiving INSTEAD of making homemade...It goes over really well and no one has to know.....
If your skillet frying,. when your done pour out all the oil and leave the dark crummie goodies in the bottom of the skillet ,..turn the eye on add flour first, stir well ,them slowly add water until it forms the gravey just the way you like it,,,It will thicken, take your time,..,you may not get it right the first time it takes practice, dont give up, goodluck!!
