EASY CHICKEN QUESADILLAS
flour tortillas
1 can cheese soup
1/2 cup thick and chunky salsa
1 lb boneless skinless chicken breast
Cook chicken as desired and shred meat into a bowl. Combine salsa, chicken meat and cheese soup. Spoon 1/3 cup of mix onto tortillas. Fold, place on baking pan.
Bake on 350掳F for about 7 minutes.
Pptional: Melt butter in a skillet and place tortillas in butter before baking.
Enjoy! These are a family favorite. We top them with sour cream, lettuce, and tomato.
EASY CHICKEN ENCHILADAS
1 8 oz pkg of softend cream cheese
1 small container of sour cream
1 large jar of medium to hot salsa
4 chicken breasts
10-12 corn or flour tortillas
1 pkg of taco cheese
Season chicken breasts to taste and grill or you can just boil them until no longer pink.
Cut cream cheese brick into cubes.
Cut cooked chicken into bite sized pieces and add to cream cheese. Stir until melted, then stir in 1/2 of jar of salsa.
Warm tortillas in microwave until softened.
Add a heaping tablespoon of chicken mix to tortilla and roll up. Place seam side down in a greased 9-13 pan.
After all of chicken mix is used, mix sour cream and the rest of the salsa together in a separate bowl. Spread over the enchiladas. Cover with cheese and bake until cheese is melted and golden brown.

The easy way:
one package of precooked chicken (southwest seasoning)
Large tortillas
Shredded cheese (taco or mexican blend)
Cooking spray
Salsa, sour cream, guac
Cover one half of the tortilla with shredded cheese. Place some of the chicken on top and then a little bit more cheese on top of the chicken so that everything sticks together when the cheese melts. Fold over
Preheat a frying pan on medium. Spray the pan with cooking spray and cook the quesadilla until its lightly toasted and the cheese has started to melt. Spray the uncooked side of the tortilla with cooking spray, then flip and cook until that side is lightly toasted. Serve with salsa, sour cream or guac.
Cooking a quesadilla is essentially the same as cooking grilled cheese. If you want to make it more interesting, you can also add some diced onions, bell peppers or chopped cilantro to the filling.

take a can of cream of chicken soup and pour in the tortilla shells and press in a quesadilla machine.

Heat a electric skittle to 350
Put chicken and cheese on one side of shell. Fold over. Place in skittle for 3 minutes, flip and heat other side for 3 minutes.
Cut into triangles and dip in salsa and/or sour cream.

Fiesta Chicken Quesadillas
Ingredients
1 lb. cubed, boneless, skinless chicken breasts
1 - 2 Tbsp. Fiesta Party Dip Mix鈩?br>
1/2 cup diced onions
1 Tbsp. olive oil
4 oz. can green chiles
8 oz. shredded Monterey Jack cheese
8 (7-inch) flour tortillas
Vegetable oil
Sour cream
Corn, Black Bean Salsa
Directions
Saut茅 chicken, Fiesta Party Dip Mix鈩?and onions in olive oil until chicken is no longer pink. Add green chilies. Sprinkle cheese evenly on 4 tortillas. Top cheese with equal amounts of chicken mixture; top with second tortilla. Brush outsides of tortillas with vegetable oil. Heat grill or griddle to medium heat. Grill quesadillas for 2-3 minutes on each side or until lightly browned and cheese melts. Cut into wedges; garnish with sour cream and Corn, Black Bean Salsa. Makes 8-10 servings.

here's my easy chicken quesadilla recipe
2 tbsp GOOD butter (unsalted)
1 flour tortilla
1 chicken breast, (boiled or grilled) shredded
1 pack taco seasoning
1 pack 'Mexican' four cheese
1 can cheese soup (Campbell's)
spread a layer of soup (concentrated, not thinned) onto the tortilla. add cheese on one side of the tortilla and chicken on the other. sprinkle a little taco mix. add more cheese and fold in half. grease the pan w/ butter and cook.
the TRICK is to cook on LOW heat. keep it on low heat, this lets the tortilla get crispy and buttery and gives the ingredients time to melt and blend without burning the tortilla.
enjoy w/ sour cream and hot sauce.
