I'll be having a food sale and i dont know what to do with the chicken! Chicken recipe anyone?

Me n my group of friends will be having a food sales and someone sponsor us a chicken and now we have to think of a way to cook it. But the problem is,we have no stove to cook it on the spot that day. We can only bring an oven for our food sale. If we pre-cook the chicken at home,i'm afraid it'll be cold after a while and no one will buy it. Help! What should i do? One more thing,we need to divide the chicken for quite a number of people. Any easy and quick chicken recipe?I'll be having a food sale and i dont know what to do with the chicken! Chicken recipe anyone?

1 (5 to 6-pound) roasting chicken


Kosher salt


Freshly ground black pepper


1 large bunch fresh thyme


4 lemons


3 heads garlic, cut in 1/2 crosswise


2 tablespoons butter, melted


1/2 pound sliced bacon


1 cup white wine


1/2 cup chicken stock





Preheat the oven to 425 degrees F.


Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the chicken in a large roasting pan. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the thyme, reserving enough thyme to garnish the chicken dish, 1 lemon, halved, and 2 halves of the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Cut 2 of the lemons in quarters and scatter the quarters and remaining garlic around the chicken. Lay the bacon slices over the chicken to cover.





Roast the chicken for 1 hour. Remove the bacon slices from the top of the chicken and set aside. Continue roasting the chicken for an additional 1/2 hour, or until the juices run clear when you cut between a leg and thigh. Remove to a platter and cover with aluminum foil while you prepare the gravy.





Remove all but 2 tablespoons of the fat from the bottom of the pan. Add the wine and chicken stock and bring it to a boil. Reduce the heat, and simmer for 5 minutes, or until reduced by half.





Slice the chicken on a platter. Garnish the chicken platter with the bacon slices, roasted garlic, reserved thyme and 1 lemon, sliced. Serve with the gravy.I'll be having a food sale and i dont know what to do with the chicken! Chicken recipe anyone?
SESAME CHICKEN

This recipe is good and easy to prepare. I usually use hoison sauce for the fruit jelly.





1/4 tsp.Garlic powder


1/2 tsp.Ginger


1 to 2 tsp.Soy Sauce


1 Chicken Breast (Cut-up)


1 tsp. Sesame oil


1 Tbsp. Sesame Seeds


1 Tbsp. Fruit Jelly (Your choice - Try Plum)


1 tsp.Sugar


1 tsp.Cornstarch


2 Tbsp.water (or chicken stock)


5 - 10 drops of Tabasco Sauce





Stir fry the chicken. Add all remaining ingredients EXCEPT the cornstarch and water to the chicken. (Watch it cooks fast). Thicken and coat the chicken with the thickening mixture. Add the cornstarch/water solution and cook until bubbly. (Again, it cooks fast). Serve.
Orange Island Chicken


INGREDIENTS:


1/2 cup orange juice


1/3 cup soy sauce


1 teaspoon ground ginger


1/2 teaspoon onion powder


1 teaspoon orange zest


3 pounds boneless skinless chicken breasts, cut into strips


1/2 cup all-purpose flour


3 tablespoons vegetable oil

DIRECTIONS:


FOR MARINADE: In a zipper style bag, combine the orange juice, soy sauce, ginger, onion powder and orange peel. Mix well.


Add the chicken pieces to the marinade and refrigerate overnight, or for at least 8 hours.


Preheat oven to 350 degrees F (175 degrees C). Remove the chicken from the marinade. (Do not discard the marinade). Coat the chicken with flour. In a large skillet, heat the oil and brown the chicken over medium high heat. Transfer to a 9x13 inch baking dish. Pour remaining marinade over chicken. Cover and bake in the preheated oven for 30 minutes. Remove cover and bake for 15 minutes more. Let cool and serve.
you can make chicken salad
fry it or roast it or steam it n pour gravy on top or cook it w. herbs or wrap it in foil n bake..
