Try going to www.foodnetwork.com Rachel Ray has a great recipe for chicken that kids will love. I make it alot. Search for chicken toes by Rachel Ray but don't let the name fool you. It's called chicken toes only because the chicken resembles them after they are cooked. Great recipe to get the kids involved.
Where there are 4 kids, there is usually cream of something soup!!!! And, the standard Cream of Mushroom Chicken Casserole. How about we forget about that one for a bit? Here's another thought:

4 -6 Boneless, skinless chicken breasts cut into strips (tenders)

1 bottle Italian Salad Dressing

1 -2 eggs mixed with 1/2 cup water

Olive or Vegetable oil for frying (you can also bake if you want)

1 1/2 cups Italian Bread Crumbs or Panko Crumbs

1/2 cup grated Parmesan cheese

Marinate Chicken tenders in dressing over night. Drain. Put in egg wash and then roll in bread crumbs. If you are frying the tenders, then heat oil until very hot. Add tenders and saute until crisp and golden brown. If you are baking them, then line the tenders up on a baking sheet and drizzle with a little oil. Bake at 375 for approximately 40 minutes or until crispy and golden brown. Serve with Tator Tots, Ketchup, and crisp carrot stix with Ranch Dressing

Its called:

Oven Fried Chicken

Cut up your chicken breasts into strips about 2 inches long and 2 inches wide. Dip them into evaporated milk with one beaten egg added mixed together; and then roll into seasoned breadcrumbs that you have added parmesean cheese. Place in a well greased baking dish. Add dabs of butter on top of chicken pieces and bake in a high oven of 400 degrees to start, till they start browning a little. Then lower your oven to 325 degrees and bake for about 1/2 hour till golden brown. My sons grew up on this recipe and they still love it.
Ok, this is good if your kiddos will eat spinach and mushrooms, most of mine do =)

Oven 350

Set your chicken in a baking dish

Use 2 cans healthy cream of mushroom soup

1 bag frozen chopped spinach thawed and drained well

1 8 oz. pkg sliced mushrooms slightly sauteed in cooking spray or use canned(drain)

Mx the soup w/ spinach and mushrooms (will be thick but the juice from the chicken and the water that will come out of the shrooms will thin it out) and spoon over the chicken

Cover with foil and bake about 40-45 min. remove foil, sprinkle on your fave shredded cheese and pop back in until melted - the cheese is optional of course.

I serve this with rice(we use brown) and usually serve the sauce over the rice and add a salad and/or a veggie, some whole grain bread and you're all set! Good as leftovers too!

Enjoy,

Tori
You might be at a loss with that ingriedient thing.

LEMON GINGER BAKED CHICKEN FOR A CROWD

24 chicken quarters

Marinade:

1 1/4 cups lemon juice (may use reconstituted but fresh is better)

1/3 cup fresh ginger, finely minced

1/4 cup fresh parsley, chopped

1/2 cup peanut or olive oil

1 1/2 teaspoons granulated garlic (or one whole head fresh)

1 teaspoon Bell's Seasoning or rubbed sage

1/3 teaspoon red pepper flakes

1 1/2 teaspoons salt

1 1/2 teaspoons black pepper

1 teaspoon paprika

To prepare marinade, combine all ingredients in a blender except chicken quarters.

Remove all excess skin and fat from chicken. Pour marinade over each of the chicken quarters to evenly coat until no marinade remains. Place in a large sized (2 1/2 gallon Hefty Zipper) plastic bag and marinate three to five hours under refrigeration.

When ready to prepare, pre-oven to 375掳F (350掳 convection). Remove chicken from marinade and discard any remaining marinade. Bake chicken for 30 to 40 minutes or until chicken is browned well. (Internal temperature should read 165掳F. When using an instant read thermometer be sure not to touch bone when taking temperature.)

Place one serving (one chicken quarter) on individual serving dishes and sprinkle center of chicken with a small amount of paprika. Garnish with slices of lemon and a sprig of curly parsley.

Recipe may be halved (12 servings) or quartered (6 servings).

An easily prepared, flavorful and economical recipe for your next party, club, or church gathering.

24 Servings.
Shake and Bake.
