I know this had a can of Rotel tomatoes in it. Can't remember anything else other than it was good.Does anyone have a recipe for King Ranch Chicken?
Howdy from Texas. This is the REAL King Ranch Chicken. And sooooo easy.
1/4 cup margarine
1 med green bell pepper chopped
1 med onion chopped
1 can (10 3/4 oz) cream of mushroom soup
1 can (10 3/4 oz) cream of chicken soup
1 can (10 oz) Ro-tel tomatoes
2 cups cubed chicken
12 corn tortillas, torn into bite size pieces (you can use up to 18)
2 cups (8 oz) shredded cheddar cheese
In a large saucepan, cook pepper and onion in melted margarine until tender. About 5 minutes. Add soups, ro-tel and chicken, stir. Put in a 13X9X2 baking dish alternately layering tortillas, mixture and cheese repeating for 3 layers ending with cheese. Bake 40 min until hot and bubbling. My Favorite King Ranch Chicken:

6-8 servings
6-8 chicken breasts
salt %26amp; pepper
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
1 small onion, diced
1 (10 ounce) can diced tomatoes with green chilies, drained
1 (8 ounce) jar Cheez Whiz
1 (11 ounce) bag cheesy plain Doritos or other corn chips, crushed
8 ounces grated cheddar cheese
4 ounces grated mozzarella cheese
paprika, to garnish
1. Steam or boil the chicken breasts until cooked through (I use my steamer and find it makes the chicken perfectly moist and tender).
2. When cool, dice into bite-size pieces.
3. In a large saucepan over medium heat, mix the soups, onion, Ro-tel tomatoes and Cheez Whiz until blended.
4. Preheat oven to 350 degrees Farenheit.
5. Layer the bottom of a greased 9x12 casserole dish with crushed chips.
6. Next, layer half the chicken pieces.
7. Top with half the sauce.
8. Sprinkle with half the cheddar cheese.
9. Repeat the layers, but top with the Cheddar and Mozzarella.
10. Sprinkle paprika over the top to garnish.
11. Bake for 30-45 minutes, or until hot and bubbly.
Here's my simple recipe:
ROTEL ';KING RANCH CHICKEN';
1/4 cup margarine (or butter)
1 med. green bell pepper, chopped
1 med. onion, chopped
1 can (10-3/4 oz.) condensed cream of mushroom soup
1 can (10-3/4 oz.) condensed cream of chicken soup (I vary this recipe,
by using 2 cans of the cream of chicken, versus using the mushroom
soup)
1 can (10 oz.) Extra Hot or Milder Ro-tel
2 cups cubed cooked chicken
12 corn tortillas, torn into bite-sized pieces (I end up using more
than this, about 18)
2 cups (8 oz) shredded cheddar cheese
In a large saucepan, cook pepper and onion in melted margarine, until
tender-about 5 min. Add soup (s), Rotel and chicken, stirring until
well blended. In a 13x9x2-inch baking pan, alternately layer tortillas,
soup mixture and then cheese, repeating for 3 layers, ending with cheese.
