Make Italian Wedding Soup. This has been a tradition in my family for years!
It is chicken noodle soup with little tiny meatballs in it. My grandmother makes chicken stock by boiling a whole cut up bone in chicken in a large stock pot until the meat is almost cooked. Remove the meat and let it cool. Add a small onion diced, some fresh chopped parsley and some celery and carrots sliced to the boiling stock. Keep it at a low boil.
Depending on how many people you will be serving get one to two pounds of ground beef, some bread crumbs (seasoned or plain), a couple eggs, salt, pepper, diced onion, fresh parsley chopped and some garlic powder or fresh garlic chopped. Mix together and roll out tiny bite-sized meatballs. Put them onto a cookie sheet. Once you have them all rolled, start dropping them one by one into the boiling stock (turn it up a bit so you have a pretty good boil). Let them boil about five to eight minutes or so and turn it back down to a low simmer/boil.
When the chicken has cooled enough to remove the meat from the bones, pull into bite sized pieces and put it in a tupperware in the fridge to add later.
Decide what type of noodles you'd like to use for the soup. We usually use the small pasta that looks like watermelon seeds, but you can use egg noodles or any type of smaller pasta. We actually cook them right in the soup. Add the pasta/noodles and let them cook in the low boil/simmering soup.
Once the pasta is about done add all the chicken meat back to the pot.
You want to keep the soup at a low simmer/boil the entire time once the meatballs have cooked because you don't want to boil away all the stock. If you have to add more stock/broth just use some canned. I prefer to add the organic chicken broth that comes in the cardboard containers. Then if you have some left it can go right into the fridge instead of being wasted because you've opened a can.
I also have a recipe for soup croutons to float in the soup. They are made from eggs and baking powder and flour and baked on a large cookie sheet. Once they are baked you cut them into little squares. If you think you want that recipe email me. I'll have to pull it out of my recipe box.
And, if you prefer not to make your own stock you can use all canned chicken broth and buy a rotisserie chicken at the grocery store and use the meat from that. It's up to you how quickly you want it done, or how much prep time you have.
Just know that you need to have a large stock pot and you need to keep the liquid level pretty high in order to cook the meatballs and then to cook the pasta. Okay,I have a recipe,but it is not a traditional one.It is very good though.First you take about 4 or 6 boneless chicken breasts and you place them in a 10 inch preheated skillet with some oil.Saute them till well browned on all sides.Season them before hand with some seasoned salt and black pepper.You add alot of water and scape up all the brown bits.This adds a ton of flavor to the soup.Next you can chop up fresh veggies if you have the time,or just add a bag of frozen mixed veggies.You can also add fresh herbs.Then,let simmer a few hours until the chicken falls apart.At the last minute,just add cooked egg noodles.I know the recipe has no chicken bones,but by browning the chicken and adding the water it makes it`s own ';stock';.Hope you enjoy this recipe!Oh and you can also chop some onion up and cook it while you brown the chicken for extra flavor!
not really a recipe, but here goes. i buy broth {2-3 large cans} and different frozen veggies.1 bag of carrots, 1 bag celery, pepper, onion mixture , 1 bag peas, and 1 bag of corn. boil veggies in broth for 10-15 minutes and add your favorite cooked pasta and chicken to pot. add seasonings and your done. i like to add crushed red pepper for a little bite. you can add any veggie you like, ive tried green beans, and okra in mine.
Buy Chick broth(SWANSONS) Buy as many containers as you need to measure up to the amount of broth needed. Add cut up pieces of skinned chicken. The thighs have the most flavor.Add whole baby carrots, stalks of celery, and a large onion (cut in half, put into the broth)Bring to a boil,then turn down to simmer.Cook for at least an hour. For a killer flavor, add ecsaroll ( a type of lettuce)to the pot just before you serve the soup. Test to see if you need to add salt to your yummy broth. Test a carrot, if it's tender...the soup is done. Please make a large bag of thin egg noodles- rinse in cool water then drain well. Add a big scoop of noodles in your bowl, than add your soup goodies. Please try the Escarole. This is a beautiful delicate soup secret. Put alot in haha!

2. Cooking Directions
Bring a large pot of lightly salted water to a boil. Add egg noodles and oil, and boil for 8 minutes, or until tender. Drain, and rinse under cool running water.
In a large saucepan or Dutch oven, combine broth, salt, and poultry seasoning. Bring to a boil. Stir in celery and onion. Reduce heat, cover, and simmer 15 minutes.
In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly. Stir in noodles and chicken, and heat through.
Yield: 12 servings

Chicken Noodle Soup Recipe
A Best Traditional Soup Recipe
Preparation time: 30 minutes. Serves 8
Ingredients:
1/4 pound fettuccine pasta, cut short (or pasta of your choice if small)
2 cups chicken, cooked and diced small
2 quarts chicken broth (fresh or canned)
1 medium carrot, diced
1/2 medium onion, diced
1 stalk celery, diced
3/8 teaspoon fresh minced basil
1 1/4 teaspoon dried parsley or 4 teaspoons fresh chopped parsley
Salt and pepper, if desired
Instructions:
Cook pasta al dente (not mushy, still a little chewy)
Dice chicken into small pieces
Bring the stock to a simmer in a soup pot or stock pot
Add carrots, celery, onion, basil and simmer until vegetables are tender
If stock does not have enough flavor, add more stock and reduce (continue heating) to concentrate the flavor
Season to taste (salt, white pepper)
Add the chicken and pasta to the stock and let them heat through before serving
Correct seasoning to taste, if needed
Ladle into soup bowls
