I personally like the rotesserie deli chicken too. It stays good for atleast 3 days though it usually doesn't last that long around here.

Anyhoo, chop up the chicken finely and heat up in a pan with your favorite salsa or mild diced green chilis.

lay down a tortilla corn or flour with a little butter in the pan, add chicken mixture, your favorite cheese and top with another tortilla. Fry on both sides until crisp.

have on the side- tomatoes, salsa, guacamole, lettuce, and sourcream, black olives. I usually just make a side salad with these and make my own dressing with sourcream, salsa and mashed avacados and ouver salad. YUMMO!!Recipe for chicken quesadilla plz?
You'll need:

Options:

Top with store bought salsa or taco bell sauce packets
8 oz. cheddar cheese, sliced

3 lg. boneless, skinless chicken breasts, diced

1 pkg. taco seasoning mix

1 cup water

6 lg. flour tortillas

Dissolve taco seasoning in water in large skillet. Add chicken breasts and cook until chicken is thouroughly cooked; drain. Layer cheese slices on 3 tortillas (I use a pizza pan). Next, put 1/3 of chicken on each tortilla. Top with another layer of cheese and remaining tortillas. Bake at 350掳F for about 15 minutes, until cheese is melted. Cut into quarters and serve with sour cream and/or guacamole.
