1 lb ground meat (beef or chicken)cooked and drained
1 chopped onion
bell peppers chopped (I use one of each color)
28 oz can whole tomatoes (either red or yellow)
3 cups cooked rice
Tabasco to taste
1 cup grated cheese Mexican blend preferred)
Mix everything except cheese together and pour into casserole dish sprayed cooking spray. Sprinkle with cheese. Bake in 360 degree oven until cheese melted and lightly browned.

Chicken Fajitas:
Saute the chicken and slice it into strips. Season with chile powder/garlic salt/poultry seasoning to taste.
Slice the peppers into strips and also saute in olive oil, along with some onion, until they soften and the edges start to crisp up.
Get some flour tortillas and put chicken, peppers, and sour cream in the middle.
