Apparently we'll be buying whole chickens.Cooking chicken on a barbecue pit.. anyone know any good recipes?
You said a bbq pit, what type? I'm from TN and our pits are grates on top of concrete pits with charcoal, hickory or apple wood for small stuff. The other is a pit in the ground for a pig.

Grilled Chicken


Halve the chicken and use a good rub. You can use a mesquite charcoal as a fuel source. Watch out for the whitening of the coals. Once the coals are white, put the chicken on the firebox grill for five to seven minutes, per side. Avoid over cooking.





Here is a good rub to try:





1 tablespoon ground black pepper


1 tablespoon ground white pepper


1 tablespoon sugar


2 teaspoon cayenne pepper


2 tablespoon chili powder


1 tablespoon ground cumin


1 tablespoon garlic powder


1 tablespoon brown sugar


1 tablespoon ground oregano


4 tablespoon paprika (the sweet kind -- not the hot kind)


1 teaspoon dry mustard


1 tablespoon celery salt


1 tablespoon salt





Mix ingredients thoroughly and rub on chicken a few hours before cooking.
I am smoking a whole chicken on sunday. I have made this many times, and it always comes out great.





Wash chicken and make sure the pouch is taken out.


I rub mine with Good Seasons Dry Italian Salad Dressing Blend


(1 whole packet per chicken, and I think there is four in the box)





Thats it.


Easy and delicious.





If you want bbq, then i suggest rubbing with a mesquite bbq blend, and using a good sauce in the end.


I like Sticky Fingers Carolina BBQ mustard based, or A really good Tomato based just before serving.
Wings and legs can be quartered and put on as is. The back and breast can be done in many ways. Personally I would skin the breasts and marinate them. It could be just about anything. Cook those away from the hottest flame.


I also like putting hickory wood chips on right as you put the meat on. It gives it, and any skewered veggies a great flavor.

my husband makes this and i love it








buy the jack daniels no.7 barbeque sauce and marinate the chicken in there for at least an hour, and then add some of that ';already in a jar, Diced'; Garlic.(don't be afraid to add alot!)....





and grill it
