Grilled Raspberry Chicken





鈥?6 boneless, skinless chicken breasts


鈥?1/2 cup frozen raspberries, thawed


鈥?1 cup raspberry vinaigrette


鈥?1/4 cup raspberry vodka (optional)


鈥?1/4 cup finely chopped mint leaves (optional)


鈥?Fresh mint sprigs, for garnish (optional)


鈥?Fresh raspberries, for garnish (optional)





Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.





Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.

1 lk of deboned chicken legs


1 pint pineapple chunks


1 can cream


3 pcs chicken sausage sliced 1/2 inch thick


salt to taste


garlic and onion for sauteeing


3 tbsp olive oil





saute garlic and onion, add cchicken slices(desired size) let its own juice come out, add pineapple, simmer, add sausage, simmer, when its almost done pour cream and boil slowly and season with salt
chicken lends itself well to many kinds of fruits. sauces that have plum,mango,orange or cranberry are delicious.
Grilled Chicken with Fruit Salsa


4 - 6 boneless chicken breasts


4 serrano chiles, seeded and chopped


Juice of 2 limes


1/3 cup oil


2/3 cup fresh orange segments


1/4 cup tequila





Cut small slits in each chicken breast. Combine remaining ingredients in a blender and blend until smooth. Pour over chicken breasts and marinate in the refrigerator overnight.





Fruit Salsa:





4 serrano chiles, seeded and chopped


2 fresh navel oranges, peeled and divided into segments


1 and 1/4 cups fresh pineapple, chopped


1/3 cup honeydew melon, chopped


1/3 cup cantaloupe, chopped


Juice of 1 lime


2 Tbsp. oil


1/4 cup fresh cilantro, chopped





Prepare fruit salsa a couple of hours before grilling chicken and allow it to sit at room temperature. Grill or broil chicken breasts until fully cooked, basting with marinade as the chicken cooks. Garnish with fruit salsa. You may substitute jalapeno peppers for serrano peppers: however only use 1 - 2.
Chicken With Fruit


Ingredients:


1 cup Onion -- chopped


2 Tart apples -- peeled, cored %26amp; sliced


1 cup Cranberry sauce -- jellied


1/2 cup Dark raisins


1 tablespoon Apple cider vinegar


1 tablespoon Packed brown sugar


2 Chicken breast halves w/o skin


1/4 teaspoon Salt -- optional


1 teaspoon Dried thyme


1/4 teaspoon Black pepper


10 ounces Egg noodles








Directions:





In bottom of large crock pot, combine onion, apples, cranberry sauce, raisins, vinegar, and brown sugar. Stir to mix well. Sprinkle chicken with salt, if desired, thyme, and pepper. Add to crock pot on top of fruit mixture. Cover and cook on high 1 hour. Stir chicken into sauce.





Reduce heat to low. Cook an additional 4 to 5 hours or until apples are tender and chicken is cooked.





TO SERVE: Cook noodles according to package directions. While noodles are cooking, remove chicken and cut into slices. Arrange noodles on serving platter and top with chicken. Spoon sauce and fruit over all.

Chicken With Fruit Sauce





Yield 4 servings





2 t Olive Oil


4 lg Chicken Breasts Halves


-Boneless And Skinless


Salt And Pepper To Taste


2 T Butter


2 md Ripe Pears; Peeled, Cored


-And Sliced Thin


2 t Lemon Juice


1/4 c Onion; Minced


1 lg Garlic Clove; Crushed


1/2 c Dry White Wine


1/4 c Chicken Broth


2 t Honey


1/4 t Dried Thyme; Crushed


1/2 c Fresh Or Frozen Blueberries;


-Thawed





In a large skillet, heat the olive oil over medium-high heat. Add the


chicken and saute four to five minutes on each side until cooked


through. Remove from the pan and keep warm. Melt 1 T of the butter


in the pan. Add the pears and 1 t of lemon juice. Saute until barely


tender, about two to three minutes. Remove from the pan and set


aside. In the same pan, cook the onion and garlic for one minute.


Add the wine and broth. Add the honey and thyme. Boil until


thickened, three to four minutes. Return the pears to the pan and add


the blueberries. Heat through, about two minutes. Swirl in the


remaining T of butter and t of lemon juice. Serve the sauce over the


chicken.

Pineapple poached chicken





Method


Pour the pineapple juice into a pan; stir in the honey and sliced spring onions and chilli. Bring to a boil and then add the chicken fillet. Poach for 10 minutes, turn, and continue to simmer gently for 10 minutes or until the chicken is no longer pink in the middle. The pineapple juice should have reduced in volume; boil this for slightly longer if a thicker sauce is preferred. Cut the chicken into thick slices, top with sliced almonds and pour over the sauce.


Cook's tip


Served with 2 portions of vegetables and 30g (uncooked weight) of brown rice, boiled.

Breast of Chicken with Kiwi Fruit


4 c Chicken broth


1 3/4 lb Whole chicken breasts


1 Stalk celery; chopped


1 Leek; white part only,


.. chopped


4 Kiwi, peeled and cut in 1/4';


.. slices


1 Orange


1 Lemon


1 tb Butter


1 tb Sugar


1/8 ts Salt


1/8 ts Cayenne pepper





Bring chicken broth to a boil in large saucepan.


Add chicken and simmer 10 minutes, skimming as


needed. Add celery and leek. Simmer 10 minutes


longer. Arrange kiwi in fan shaped pattern on


serving dish. Wash orange in hot water, then dry


and peel one half very thinly. Finely shred peel


and sprinkle over kiwi fruit. Squeeze juice from


lemon and orange. Melt butter in saucepan and add


sugar, stirring until caramelized. Gradually add


orange and lemon juices, stirring well. Boil until


sauce is reduced to 2 tablespoons. Season with


salt and cayenne pepper. Take chicken off bone,


remove skin, and slice. Arrange on platter with


kiwi slices, pour sauce on top and serve.





Makes 4 servings.
I make a yummy chicken salad with fresh Michigan cherries.





cooked chicken chopped up


enough mayo to coat the chicken (low fat or regular)


small handful of sliced almonds


handful of fresh cherries (pitted and chopped)


squeeze of lemon juice


a little bit of vidalia onion (chopped)


teaspoon of milk


salt and pepper





mix it up and serve alone or on whole grain bread with sharp cheddar cheese (my husband likes it with provolone).
my mum does a gorgeous creamy mango chicken dish - she won't tell me how tho :(
i saw a roast chicken, garlic, blood orange and cava recipe on a programme once - looked sooooo good!
Lemon chicken.
The classic is Pullet A L'Orange.





Just broil chicken as usual (Salt, Pepper, Sage, Thyme) and baste/serve with this Orange Sauce:





3 tbsp Sugar


1/4 cup Red wine vinegar


10 1/2 oz Can beef consomme


3 tbsp Port wine


2 tbsp Cornstarch mixed with 1/4 cup water


Grated peel of 1 orange


2 tbsp Grand Marnier


1 tbsp melted Butter





Melt butter, add liquids, stir in sugar, thicken with cornstarch mixture. Flambe'. Drink leftover booze.
