cut up a chicken breast, into slices, put it into a frying pan with some oil, once the meat has sealed, add finely chopped onion, garlic, and sliced or diced peppers... fry it for a little while then add soy sauce, and honey.... as much or as little as you like...(if you like you can add greek yoghurt)

serve with rice :-)

ANGEL CHICKEN PASTA

INGREDIENTS

6 skinless, boneless chicken breast halves

1/4 cup butter

1 (.7 ounce) package dry Italian-style salad dressing mix

1/2 cup white wine

1 (10.75 ounce) can condensed golden mushroom soup

4 ounces cream cheese with chives

1 pound angel hair pasta

DIRECTIONS

Preheat oven to 325 degrees F (165 degrees C).

In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken breasts in a single layer in a 9x13 inch baking dish. Pour sauce over.

Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil. Cook pasta until al dente, about 5 minutes. Drain. Serve chicken and sauce over pasta.
Cut you chicken to pieces, wash, dry and sprinkle with salt and pepper. In large skillet pour some olive oil, brown chicken pieces on all sides, turn down heat. Chop some rosemary and sage and add. When chicken pieces are brown, add half a glass of white wine. Let evaporate. Add some good tomato puree. Cover pan and simmer for 40 minutes (if you are cooking a chicken from the range, it will take longer). 10 minutes before the chicken is done, add some capers and slices black olives. Add also a few drops of Balsamico vinegar. Serve immediately.

A quick fix I use for chicken when I don't have a meal planned is to grill it. Heat the grill, put the chicken on. Pour soy sauce and then sprinkle with garlic and onion powder. Flip. Soy sauce and spice again. It comes out juicy every time. The salt from the soy seals it in.
Curry Orange Chicken:

Prepare chicken place in baking dish, add onions and garlic, salt, pepper and red pepper flakes. To this add a cup of orange juice with one teaspoon of Madras Curry Powder.

Bake at 350 for about 90 mins covered.

Uncover the last 15 mins, and baste.
