1 sm. green pepper, chopped
1 (4 oz.) can mushrooms, drained (reserve liquid)
1/2 c. butter
1/2 c. flour
1 tsp. salt
1/8 tsp. garlic
1/4 tsp. pepper
1 can corn, drained
1 1/2 c. milk
1 1/4 c. chicken broth
2 c. cut up chicken cooked
1 (2 oz.) jar pimentos
Cook and stir green pepper and mushrooms in butter in 3 quart saucepan over medium heat 5 minutes. Stir in flour, salt, pepper and garlic. Cook over low heat, stirring constantly until bubbling. Remove from heat. Stir in milk, broth and reserved mushroom liquid. Heat to boiling stirring constantly. Boil and stir for 1 minute. Stir in chicken and pimientos. Heat until hot. Chicken Ala King
4 boneless chicken breasts, diced
4 tablespoons margarine
1/2 green bell pepper, chopped
2 (4 ounce) cans mushrooms, drained
3 tablespoons cornstarch
1 pint heavy whipping cream
1 cup chicken broth
1 (4 ounce) jar chopped pimiento
1/2 onion, diced
1/2 teaspoon poultry seasoning
salt %26amp; pepper
toast or mashed potatoes
In large frying pan, saute chicken, onion, and bell pepper in margarine till chicken is opaque and cooked.
Remove to large saucepan or pot.
Over med-low heat, add mushrooms, pimentos, 3/4 cup broth (reserve the rest), poultry seasoning, and a nice sprinkle of salt and pepper.
Stir in heavy whipping cream.
Stir well.
Increase heat to medium and bring almost to a boil.
Stir in 3 tablespoons cornstarch mixed with 1/4 cup reserved broth.
Should thicken quickly.
Remove from heat and serve over toast or mashed potatoes.
