Anyone have a good healthy recipe to use with chicken strips?

I just worked out so i don't want something that is unhealthy. I know chicken strips arent all that healthy but still. I have cooked pasta already so if anyone has a recipe for that, that would be great. ThanksAnyone have a good healthy recipe to use with chicken strips?
healthy doesn't mean not tasty!!.... ;)





Chicken Curry In Coconut Milk :





2 Tbsps. vegetable oil


2 large onions, grated


3 cloves garlic, choppped


2 tsps. turmeric


2 tsps. curry powder


1 teaspoon cumin seeds


1 lb. (450 grams) chicken breast, cut into strips


2 tsps. hot pepper sauce


1 1/2 Tbsps. lime juice


1/2 cup coconut milk


6 medium tomatoes, chopped


2 Tbsps. tomato ketchup


1/2 teaspoon salt


1/2 cup chicken stock





how to:


1. Heat oil in frying pan / skillet. Gently, sautee onions, and garlic until softened (do not burn).





Stir in turmeric, curry powder and cumin seeds. Fry for 3 minutes then add chicken, cover and cook for 7 minutes.





2. Stir in pepper sauce, lime juice, coconut milk, tomatoes, tomato ketchup, salt and stock.





3. Bring to a boil stirring occasionally for 10 minutes or until thickened.





** can be served alongside plain white rice, or basil-tomato sauce pasta :)

if I am using chicken in a salad or pasta I prefer to boil my chicken. Otherwise it sometimes gets too tough.


Boil chicken and tear into small pieces; in a small skillet add small pat of butter; add small amount of onion, add green peas, mushrooms and any other veggies you have.





very briefly stir fry these, maybe 3 min total. Put chicken in pasta and dump skillet veggies over it.





Stir and enjoy.
Try using a shake and bake on real sliced chicken theighs or breast. That is better tasting---I hate those prefab chicken stips or fish. Do your own with the real thing.
try grilling the strips then placeing them over a salad
