What's a good summer recipe using left-over chicken ?

All I can think of is chicken soup and hot chicken sandwiches, both of which don't fit with the heat...

Hawaiian Chicken Salad





Ingredients:


2-1/2 cups diced cooked chicken


1 can (20 ounces) pineapple tidbits, drained


1 cup seedless red grapes, halved


3/4 cup sliced celery


3/4 cup mayonnaise


1/2 teaspoon salt


1/4 teaspoon pepper


1 cup navel orange segments


3/4 cup sliced firm bananas


1/3 cup salted peanuts


Directions:


In a bowl, combine the first seven ingredients. Fold in oranges. Cover and refrigerate until chilled. Just before serving, fold in bananas and sprinkle with peanuts. Yield: 8 servings.

Strawberry Chicken Salad





Ingredients:


5 cups spring mix salad greens


2 cups cubed cooked chicken


1-1/4 cups sliced fresh strawberries


2 medium kiwifruit, peeled and chopped


1 large apple, chopped


1/4 cup crumbled blue cheese


1/3 cup poppy seed salad dressing


Directions:


In a large bowl, combine the first six ingredients. Drizzle with dressing; toss to coat. Serve immediately. Yield: 4 servings.

Summer Chicken Salad





Quick Cooking


Ingredients:


2 cups cubed cooked chicken


1 celery rib, thinly sliced


1/2 cup seedless red grapes


1/3 cup raisins


1/2 cup mayonnaise


1/2 teaspoon salt


1/8 teaspoon pepper


1/3 cup chopped pecans


Leaf lettuce


Tomato slices, optional


Directions:


In a large bowl, combine the chicken, celery, grapes and raisins. In a small bowl, combine the mayonnaise, salt and pepper. Add to chicken mixture; toss to coat. Stir in pecans. Serve on lettuce. Garnish with tomato if desired. Yield: 2-3 servings.

Chicken Salad





Ingredients:

4 bacon strips, cooked and crumbled


1 can (8 ounces) sliced water chestnuts, drained


1/2 cup thinly sliced celery


1 cup halved green grapes


3/4 cup salad dressing or mayonnaise


1 to 2 tablespoons dried parsley flakes


2 teaspoons grated onion


1 teaspoon lemon juice


1/4 teaspoon ground ginger


Dash Worcestershire sauce


Salt and pepper to taste


Directions:


In large bowl, combine the chicken, bacon, water chestnuts, celery and grapes; set aside. In another bowl, whisk together remaining ingredients; add to salad and toss to coat. Chill until serving. Yield: 4-6 servings.What's a good summer recipe using left-over chicken ?

I use both of these site all the time. Stay cool. It's almost 100 degrees today, and I'm looking for ideas too. Now I have some.
Chicken Cilantro Salad





2-4 oz cooked chicken , shredded or cubed


2 tablespoons almonds, slivered


1 garlic clove, minced


2 teaspoons jalapeno peppers (optional)


1 tablespoon fresh cilantro


(if fresh is not available, 1 teaspoon of dried can be substituted)


1/4 cup light sour cream


1/4 cup yogurt, plain, fat free


1/2 cup roasted red peppers, diced


Salt and pepper to taste





Use leftover chicken or cook chicken ahead of time


and chill thoroughly before serving.


Pull chicken apart using forks or dice into small cubes.


Mix all ingredients, except chicken,


and combine well.


Add chicken to mixture and stir to combine.





Serve on 100% whole wheat bread,


lettuce cups or a bed of mixed spring greens


(also known as mesclun greens).
