Anyone know a good easy recipe for chicken Thai fried rice?

me and my bf go out to eat thai food all the time and i would love to learn how to make thai fried rice and pad thai.

THAI CHICKEN FRIED RICE





3 tbsp. fish sauce


1 tsp. hot bean paste or hot bean sauce


2 tbsp. cooking oil


2 beaten eggs


1 tbsp. cooking oil


2 cloves garlic, minced


1 med. onion, chopped


2 boneless, skinless chicken breast halves, cut in 1/2 inch cubes


3 c. chilled cooked rice


2 tbsp. snipped cilantro or parsley


1 tbsp. lime juice


1 sm. tomato, cut in thin wedges


1 sm. cucumber, sliced


Cilantro, optional





In small bowl stir together fish sauce and bean paste. Set aside. Preheat wok or large skillet over medium high heat. Add 1 tablespoon cooking oil. Add eggs. Tilt wok or skillet to form thin sheet of egg 7-8 inches wide. Cook, without stirring, 2 minutes or until set. Slide egg sheet onto cutting board. Cut into 3/4 inch wide strips. Cut strips into 2 inch lengths. Return to wok or skillet.


Add 1 tablespoon cooking oil. Stir-fry garlic and onion 2 minutes. Add chicken and stir-fry 2-3 minutes or until done. Add rice and fish sauce mixture. Stir for 1 minute or until heated through. Gently stir in egg strips. Cover and cook 1 minute. Add cilantro or parsley and lime juice. Toss lightly. Spoon onto serving platter. Arrange tomato and cucumber around edge of platter. THAI FRIED RICE





4 c. steamed rice


3 tbsp. vegetable oil


1 sm. garlic, finely chopped


10 oz. pork, chicken or beef


3 egg beaten


3 tbsp. fish sauce


1 chopped spring onion





Heat oil in a frying pan and fry garlic, add meat and fry for 5 minutes. Pour eggs into center of pan. Stir until beginning to set then add rice and stir well. Sprinkle fish sauce over and mix well. Add onions and stir them through. Remove from heat.





PHAD THAI





1/2 lb. dried rice noodles, 1/8'; wide


Warm water


1/2 lb. shrimp or chicken or pork


1/4 c. fish sauce


1/4 c. %26amp; 2 tbsp. sugar


2 cloves finely chopped garlic


1/4 c. %26amp; 2 tbsp. white vinegar


1 tsp. paprika


4 slivered green onions


1/2 c. oil


2 eggs


3/4 lb. bean sprouts


2 tbsp. ground roast chili


3/4 c. ground roasted peanuts (peanuts finely chopped)


Lime wedges





Soak noodles 30 minutes until pliable and drain (sometimes it takes longer). Mix sauce (sugar, vinegar, paprika and fish sauce). Set aside. Heat wok, stir fry meat, add noodles. Add garlic and sauce. Tuck eggs under noodles and add oil as needed. Add sprouts and garnish with green onions, peanuts and lime wedges.
