Here's one:

Balsamic Chicken with Thyme Entree

1/4 cup flour

3/4 teaspoon each salt and pepper

4 boneless chicken breast halves

2 tablespoons olive oil

1 large sweet onion, cut in half then thinly sliced

1 cup chicken broth

2 tablespoons balsamic vinegar

2 teaspoons fresh thyme or 1/2 tsp. dried

Mix flour and 1/2 teaspoon each salt and pepper on a plate. Dredge chicken through the mixture and shake off excess.

In a large skillet, heat oil. Add chicken and cook 10 minutes or until browned and cooked through. Remove to a plate and keep warm.

Add onion to skillet and saute 1 to 2 minutes until lightly browned. Add broth, vinegar, thyme and remaining salt and pepper.

Bring to a boil and cook stirring often, 7 minutes or until onions are soft and sauce is syrupy.

Place chicken on serving platter and pour sauce over top. Garnish with a sprinkle of thyme. Serves 4.
I made this last night and my husband ate until I thought he would explode.....and its easy

boil breast in water with a carrot, onion and some celery

when chicken is done, remove from broth, cool and cut into large chunks (discard celery, onion and carrot)

boil some egg noodles till done (drain)

slice some carrots, onions and celery add to broth along with chicken simmer till vegs are fork tender add

2 T. cornstarch mixed with 1/2 c. water and stir till broth thickens add some frozen peas.

simmer just a few min. till peas are heated

add noodles and toss

serve with a side salad and bread and butter

**if you have a package of chicken or turkey gravy mix like McCormicks add to 1/2c. cold water and add when you add the cornstarch mixutre if gives added richness and flavor

**also since your breast are boneless and skinless you should use boxed broth to cook the chicken, carrot, onion and celery in instead of water for added flavor

**Last night I used the broth and the gravy mix both and it was delicious
I've made both of these and they both turned out awesome (really simple and easy too):
